Sweet Potato Cornbread Muffins

Ingredients

  • 1 1/4 Cup Corn Meal
  • 1 Cup Flour
  • 1/4 Cup Brown Sugar
  • 1/2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt

Mix in Separate Bowl

  • 1 Cup Buttermilk
  • 1/2 tsp Pumpkin Spice
  • 1 tsp Vanilla
  • 1/2 Cup Melted Butter
  • 8 oz Can Sweet Potatoes (Yams) In Syrup - Drained

Instructions

  • Mix together ALL ingredients down to the salt and set aside
  • Mix remaining ingredients in separate bowl
  • Combine both bowls together and mix
  • In a large muffin tin - use a large scoop to fill to desired level
  • Bake at 375 for 20 minutes & ENJOY!!!

Peanut Butter Bites

These little bites are great to have handy for a quick snack and a burst of energy – plus they’re YUMMY!

Ingredients
  • 2/3 Cup Peanut Butter
  • 1 Cup Old Fashioned Oats
  • 1/3 Cups Chia Seeds or Flax Seeds
  • 1/2 Cup Dark Chocolate Chips
  • 1/2 Cup Dried Cherries, Dates or Cranberries
  • 3 T Honey
Instructions
  1. Add all ingredients to one bowl and mix together.
     
    Refrigerate for 15 minutes, pull out and roll into bite sized balls!
     
    SUPER easy and delicious!

Mothers Day Honey French Toast

This is the easiest & best French Toast ever! And just in time for YOU to celebrate your Mom for Mothers Day!
Ingredients
  • 6 Eggs
  • 1 Cup Milk
  • 2 tsp Vanilla
  • Bread Your favorite kind!

Ingredients for Cast Iron Skillet or Pan

  • Butter
  • Honey
  • Brown Sugar
  • Cinnamon

Topping Ideas!

  • Butter
  • Bananas
  • Powdered Sugar
  • Syrup
  • Berries
  • Whipped Cream
Instructions
  1. Whip the Eggs, Milk & Vanilla together in a bowl – set aside
  2. Heat up your Cast Iron Skillet or other non-stick pan. Melt butter, add 1-2 T Honey and 1-2 T Brown Sugar in and stir around with melted butter
  3. Dip your bread into the egg mixture and place on top of the Honey, Butter, Brown Sugar mixture (this makes it super yummy!!)
  4. Sprinkle to top with Cinnamon – extra yumminess here!
  5. Cook on one side until light brown and then flip and cook on the other side until light brown. May flip a few times until the outside appears a nice golden brown
  6. Now for the fun part! Add your favorite toppings and enjoy!!
  7. If you make more than you need…. you can store the rest in the fridge and it’s amazing heated up in the Air Fryer!
