It’s Tasty Thursday!!
Today we are going to talk about…….Black Bottom Cupcakes!!! These are so yummy you will have a hard time eating just one. My oldest son made these the other day and I had forgotten just how good they were so I wanted to share this recipe with you. The KEY is to add plenty of the cream cheese mixture into the cupcake – that gives it an almost cheesecake like texture at the bottom. Enjoy!!
Ingredients
- 1 8oz Package Cream Cheese
- 1 Egg Beaten slightly
- 1/3 Cup Sugar
- 1 Cup Chocolate Chips
- 1 Cup Sugar
- 1 1/2 Cups Flour
- 1/4 Cup Cocoa
- 1 tsp Baking Soda
- 1 Tbsp Vinegar
- 1 tsp Vanilla
- 1 Cup Water
- 1/2 Cup Oil
Instructions
- Combine first three Ingredients (Cream Cheese, Egg, Sugar) and beat well – Add Chocolate Chips and set aside
- Mix remaining ingredients well – the batter will be thin so don’t worry!
- Add cupcake liners to a pan then fill 1/3 to 1/2 full
- Drop one large Tablespoon of the cream cheese mix into the batter. (This is what makes these extra yummy!
- Bake at 350 for 25-30 minutes
