Holy Guacamole!

It’s Cinco de Mayo AND Taco Tuesday so what better day than today to share the BEST guac recipe ever! My best friend Julie & I watched closely at one of the best Mexican restaurants in New York years ago as they made tableside guacamole!

Ingredients
  • 2 Avocados
  • 2 TB Cilantro chopped
  • 1/4 Cup Onion chopped
  • 1 Tomato (Large) chopped
  • 1 TB Jalapenos chopped
  • 1 tsp Garlic
  • 1-3 TB Lime To taste
  • Salt To taste
Instructions
  1. Chop the avocados and other ingredients and add all together! You can leave it chunky or smash it up for a smoother guacamole. Both are great!
     
    If you like more tomato – add a few more in! You really can’t go wrong with this guac!
     
    To get the best avocado cut – slice the avocado in half, remove the seed and then cut the avocado in the skin sideways and then the other way. Scoop out of the skin into the bowl! Super easy!!

Black Bottom Cupcakes

It’s Tasty Thursday!!

Today we are going to talk about…….Black Bottom Cupcakes!!! These are so yummy you will have a hard time eating just one. My oldest son made these the other day and I had forgotten just how good they were so I wanted to share this recipe with you. The KEY is to add plenty of the cream cheese mixture into the cupcake – that gives it an almost cheesecake like texture at the bottom. Enjoy!!

Ingredients
  • 1 8oz Package Cream Cheese
  • 1 Egg Beaten slightly
  • 1/3 Cup Sugar
  • 1 Cup Chocolate Chips
  • 1 Cup Sugar
  • 1 1/2 Cups Flour
  • 1/4 Cup Cocoa
  • 1 tsp Baking Soda
  • 1 Tbsp Vinegar
  • 1 tsp Vanilla
  • 1 Cup Water
  • 1/2 Cup Oil
Instructions
  1. Combine first three Ingredients (Cream Cheese, Egg, Sugar) and beat well – Add Chocolate Chips and set aside
  2. Mix remaining ingredients well – the batter will be thin so don’t worry!
  3. Add cupcake liners to a pan then fill 1/3 to 1/2 full
  4. Drop one large Tablespoon of the cream cheese mix into the batter. (This is what makes these extra yummy!
  5. Bake at 350 for 25-30 minutes

BEST BUCKEYES

We are OSU Buckeye fans! It helps having triplets boys who go to Ohio State University but even before that we have been hugs fans of the Buckeyes – the trees (we have a massive one in our backyard), the team and of course the yummy combination of chocolate & peanut butter!
We hope you enjoy this delicious recipe as much as we do!
Ingredients
  • Stick Butter
  • 1 Pound Powdered Sugar
  • 1 1/2 Cups Peanut Butter
  • tsp Vanilla
  • 1 1/2 Bags Chocolate Chips
  • T Paraffin Wax
Instructions
  1. Mix first 4 ingredients together. Roll into small balls and chill overnight (Just try not eating a couple of these even before the next step!)
  2. Melt the chocolate and wax together in a double boiler. The wax is to make the chocolate smooth, shiny and stick better – you don’t need a lot.
  3. Dip the chilled balls into the chocolate with a toothpick. Place on wax paper to cool. Enjoy!
