Pan Roasted Corn Salsa

OH MY is this Corn Salsa yummy!! This is a family favorite around here so it goes quick!
It works great as a dip with chips but is equally yummy as a side dish. Have fun and enjoy!
Ingredients
  • 3 TBSP Olive Oil
  • 2 1/2 Cups Fresh Corn Kernels
  • 2-3 Large Tomatoes Chopped
  • 2/3 Cup Green Onions Chopped
  • 1/4 Cup Fresh Cilantro Chopped
  • 1/4 Cup Red Onion Finely Diced
  • 3 TBSP Line Juice
  • 1 TBSP Jalapeno Peppers Chopped
  • 3 Garlic Cloves Minced
Instructions
  • Heat Olive Oil in large skillet over high heat. Add corn kernels (The best is when they’re fresh cut off of leftover corn on the cob but you can use frozen corn in a pinch!) Saute corn until light brown (about 5 minutes) Transfer to large bowl and cool.
  • Chop, dice and mince remaining ingredients and put into a bowl and mix together. By the time you’re done with all the chopping, the corn should be cool. Add the corn to the bowl, mix it up and you’re good to serve! Season with Salt & Pepper if desired.
     
    Note: If you like it HOT – then add extra Jalapeno peppers. You can use the pre chopped ones from a jar. Same with the garlic – you can also use the garlic from a jar. For each “Clove” I use 1 tsp.

Welcome To The Pawnee Cutie!

Our very first home that we officially “Flipped”! This was such a FUN project! When we first walked in you could tell that this was a home that needed some LOVE! Everything needed to go so we ripped out flooring, cabinets, walls – added new sections to enhance the flow and added a much needed second full bathroom in a space that previously was….. well…..let’s just say it wasn’t somewhere you ever wanted to hang out in before! This project came right as COVID started so we took a little longer than we had expected but in the long run, it was totally worth it! Decadent Peanut Butter Chocolate Chip Cookies

This is one of our family’s absolute FAVORITE cookies. We whip them up on a regular basis. The whole house smells incredible and of course, having warm cookies that are fresh out of the oven is a little slice of heaven!

Decadent Peanut Butter Chocolate Chip Cookies

These are absolutely the BEST Peanut Butter cookies you will ever have! Ooey, Gooey and absolutely delicious! Once you try them, you’ll make a double batch the second time…. guaranteed!

Ingredients

  • 3/4 Cup Butter Cold works best
  • 1 Cup Peanut Butter
  • 1 Cup Sugar
  • 1 Cup Brown Sugar
  • 2 Large Eggs
  • 2 tsp Vanilla
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 2 1/2 Cups Flour
  • 1 1/2 Cups Dark Chocolate Chips Ghirardelli is amazing!!
  • Reeces Peanut Butter Cups

Notes

  • Mix the butter with sugars until smooth. Blend in the eggs and vanilla. Then add in baking soda, salt and flour until smooth. Finally add the chocolate chips! Dark Chocolate makes these even more decadent! The dough will be greasy.
     
    Scoop into large balls on a cookie tray and then press chopped up Reese’s Cups into the top. These are best when they’re large – that’s why they’re so decadent!
     
    Bake at 350 for 12 minutes. Do not overcook – they will seem a little gooey, that’s the best part! They’re AMAZING right out of the oven and will stay soft for days if stored properly.
